Buffalo Mozzarella in Paestum: History, Tradition and How It’s Made

By five in the morning, a buffalo dairy in Paestum is already alive.

Fresh buffalo milk arrives at the dairy. Steam rises as the cheesemakers begin working. Hands move through a process that has been repeated here for generations: milk becomes curd, the curd is stretched, and finally it takes the familiar shape of fresh mozzarella. Outside, the buffalo are beginning their day.

When you think of Paestum, you probably picture its magnificent ancient Greek temples. But there is another side of Paestum that is just as deeply connected to this land: buffalo mozzarella. Known in Italy as Mozzarella di Bufala, this fresh cheese is one of the great specialties of Campania. Around Paestum, mozzarella is not simply a food to taste. It is part of the history, landscape and agricultural traditions of Paestum.

This is why our Buffalo Mozzarella Experience in Paestum is much more than a cheese tasting.

The Buffalo Mozzarella Experience is a private morning visit to a working buffalo dairy in Paestum. Guests visit the buffalo stables, see how fresh buffalo milk is transformed into mozzarella and ricotta, explore the farm museum and enjoy a farm lunch featuring freshly made dairy products and local ingredients.

It is an opportunity to discover the animals, the dairy, the people and the traditions behind one of Italy’s most famous foods.

Why is buffalo mozzarella so famous in Paestum?

The story begins with the landscape.

Paestum lies in the Piana del Sele, a fertile plain historically characterized by rivers, wetlands and abundant vegetation. This environment was particularly suitable for water buffalo, animals that are naturally well adapted to warm and humid areas. Over the centuries, buffalo farming became an important part of life in southern Campania. The animals provided milk, and their milk became the essential ingredient for producing fresh cheeses that eventually made this area famous.

Today, Mozzarella di Bufala Campana DOP is one of Italy’s best-known protected food products. But the story of the buffalo in Italy goes back much further.

How did the buffalo arrive in Italy?

The exact origins of the water buffalo in Italy remain debated.

Different theories have been proposed about when and how these animals arrived on the Italian peninsula. One widely discussed theory connects their introduction to southern Italy with movements from the eastern Mediterranean and Arab influence. Historical evidence confirms the presence of buffalo in Italy by the Middle Ages. They became established in areas of southern Italy, including Campania, where the animals were particularly well suited to humid and marshy environments.

Why did buffalo thrive around Paestum?

For centuries, the countryside around Paestum looked very different from what visitors see today. Paestum and the Sele Plain contained wetlands, waterways, and areas that were difficult to cultivate.

For people, these environments could be challenging. For buffalo, they were much more suitable. Water buffalo are strong animals that tolerate humid environments and can feed on vegetation growing in wet areas. Their presence gradually became an important part of the agricultural economy of Campania. The buffalo was therefore not simply an animal raised for its milk. It became part of the relationship between people and the landscape.

Over time, buffalo milk was transformed into fresh cheeses using the traditional pasta filata technique, in which the curd is stretched and shaped. This tradition eventually gave us the buffalo mozzarella we know today.

The Bourbon period and the development of buffalo farming

A major change came in the 18th century, during the Bourbon period. The Bourbon rulers supported agricultural development, livestock breeding and dairy production in the Kingdom of Naples. One of the best-known examples was the royal estate of Carditello, north of Naples.

Here, buffalo breeding and dairy production were developed on an important scale, while agricultural experiments and new techniques contributed to the modernization of livestock and dairy farming. At the same time, buffalo farming continued to develop in the Sele Plain, around Paestum, Eboli and Battipaglia. The area became an important center for dairy production, and its products were transported to markets in Naples and elsewhere.

The foundations of today’s buffalo mozzarella tradition were becoming stronger.

Buffalo mozzarella and the landscape of Paestum

This is one of the reasons why tasting buffalo mozzarella in Paestum is so special. The archaeological temples and the buffalo farms may seem like two completely different experiences, but they are actually part of the same landscape.

The ancient Greeks built their temples here more than 2,500 years ago. Centuries later, farmers and buffalo breeders developed agricultural traditions in the same fertile plain.

A Morning with Us: Inside a Buffalo Dairy in Paestum

During our Buffalo Mozzarella Experience, you can see how fresh buffalo milk is transformed into mozzarella and ricotta. Your visit begins at the dairy, where a local guide explains the production process and the traditional techniques used to make these fresh products.

The process is based on the traditional pasta filata method. The milk is transformed into curd, which is then worked and stretched in hot water until it reaches the characteristic texture of mozzarella. The cheesemakers shape the mozzarella by hand, creating the familiar rounded forms before the cheese is placed in water to cool and preserve its freshness.

An important detail is that the Buffalo mozzarella is made fresh every morning by the so called Casaro the mozzarella artisan. Traditional buffalo mozzarella is made using fresh buffalo milk, for this reason, production takes place in the morning, following the daily rhythm of the dairy.

For travelers, this also means that a morning visit is the best way to experience the dairy and its production process.

Meet the buffalo

After discovering how mozzarella is made, you will meet the animals behind the entire tradition. The visit includes the buffalo stables, where you can see how the animals are cared for and where they spend time resting. The buffalo are an essential part of the dairy, and seeing them up close gives a completely different perspective on the food you are about to taste. They are also fascinating animals to meet. For families traveling with children, this is often one of the most memorable parts of the experience. Children can see the buffalo up close, observe their behavior and, when possible, interact with them.

Discover the old farming traditions

The experience also includes a visit to the farm museum: here you can see tools and objects that were once used in everyday agricultural life. Among them is an old Italian three-wheeled motor vehicle that was used to transport milk.

These objects tell the story of a rural world that has changed considerably over the last century. They help visitors understand how much work went into producing and transporting food before modern technology and refrigeration transformed agriculture.

The museum adds another dimension to the visit: the experience is not only about mozzarella, but also about the agricultural history of the countryside around Paestum.

And then comes lunch…

After seeing how mozzarella is made and meeting the buffalo, it is time for the most anticipated part of the experience: LUNCH

The meal is based on products made at the dairy and ingredients from the surrounding countryside. You will taste fresh buffalo mozzarella, ricotta, vegetables from the garden and homemade desserts.

The idea is simple:

First you see it.
Then you learn about it.
Then you taste it.

And tasting buffalo mozzarella fresh at the place where it is produced is very different from simply ordering it at a restaurant.
