Buffalo mozzarella: a thousand-year history of a product known all over the world

Among the best known cheeses in the world, buffalo mozzarella is one of the first dairy products in Italy for export abroad. Its ancient history bases its foundation since the Middle Ages. There are few territories that can boast the production of authentic Campanian bufala mozzarella with the D.o.p. and mostly fall within the historical borders of ancient Campania and some neighboring areas: in particular Naples, Caserta, Salerno, some municipalities of Benevento, Foggia, Venafro and the municipalities of the south pontino. Milk expressly destined for the production of mozzarella is obtained only from the buffalo of the “Mediterranean breed”, a buffalo breed recognized in 2000 thanks to the millennial isolation in the south of Italy where, introduced by India by the Normans, or the Arabs – even if some sources lead to the Roman age – thanks to the favorable climate and the numerous marshes present, they find their ideal habitat.

Mozzarella is a food rich in animal protein and minerals, especially calcium, but also has interesting percentages of sodium, phosphorus as well as potassium and magnesium. Equally important is the intake of vitamins – especially B12 (Cobalamin), K (Phylloquinone) and J (Choline) – and is also quite rich in beta-carotene. Because of its nutritional values, mozzarella is considered an important food for healthy eating, especially for women, both young and menopausal: this is mainly due to its high calcium content, essential for the good condition of the bones . The dairy product is also recommended for those who practice physical activity as it is rich in protein and, therefore, able to increase muscle mass. And last but not least, mozzarella is a great help in preventing gout.
